The bread kvass that we know is the base on the basis of which you can make drinks with different tastes: today we are preparing berry kvass.
The basis for kvass can be rye bread. The stale black crust is a natural sourdough. But bread is bread: its taste, no matter how you want to get rid of it, will be present. If you want to deprive the drink of bread taste, ferment it with ready-made yeast. For sweet berries – this is a good option, but for sour berries rye note will be a good pair.
We will prepare cherry kvass, in cherry there is both sweetness and acid. Therefore, for her, both options are acceptable. But here, for example, strawberries, if you will choose it as the main ingredient, with a bread flavor is not very friendly.
There is a third option: you can use both bread and yeast for starter culture. Bread will no longer play a major role in the fermentation, but will give the drink a rye flavor.
In short, there are enough options: they all work, so experiment!
Any kvass, including berry, is prepared for two days. On the first day, the product is fermented, during the second ripens. The process can be extended for another day – during this time, the drink will begin to play, it will become slightly carbonated.
Cherry with pits – 250 gr.
Sugar – 2 tbsp.
Dry yeast – 6 gr.
Raisins – 10-15 pcs.
Rye bread – 4 slices
Water – 1 l.
We wash the cherries and boil them until the state of the berry decoction – we get something like a bright red compote. While it is still hot, we filter it (gauze or sieve) and pour it into a separate container – best of all in an enameled or ceramic pan: fruit acid oxidizes the metal and the taste of the drink may suffer. No aluminum utensils! The final touch for the wort is the addition of rye bread, also pour raisins, sugar and yeast.
We leave kvass to roam for a couple of days – and you can immediately try! Kvass can be stored in plastic bottles for a long time, especially in a dark and cool place.
If you decide to cook strawberry kvass, here’s a little tip. This is a real dessert drink, the sweetness of which you may need to regulate. To do this simply with citric acid – a couple of grams will bring everything back to normal, although it would be good for sweet tooth even without it.
