hot white chocolate with cardamom

In order for everything to work out in this recipe, it is important to choose the two main components correctly – cardamom and white chocolate.

Cardamom is a unique spice. It belongs to the same plant family as ginger. The taste and smell of cardamom is not like any other spice. It has notes of pine, and the sharpness of the zest, and the astringency of freshly ground nutmeg. Cardamom is one of the most commonly used spices in India, Scandinavia and the Middle East, but in other cuisines of the world it is used much less often.
Perhaps the reason is the price. Green cardamom is one of the three most expensive spices in the world, along with saffron and vanilla. The aroma and taste of cardamom is so intense that you always need to put it very little, so having bought a small handful of fragrant spices you will provide yourself for a long time. Do not buy ground cardamom, it quickly loses its smell. Do not buy cardamom in cheap paper packaging – these are weathered spices. Buy cardamom on the market or grains in sealed plastic bags or in glass. It is important to know that there are two types of cardamom – green and black.
The first is more expensive, the second is cheaper. Green is bright and intense in its flavoring qualities, it is usually put in baked goods, and black, although it has similar characteristics, it also has a peculiar smoked aroma. This type of cardamom is used more often for savory foods.

Another key ingredient is white chocolate. Suitable for this drink white chocolate should contain at least 20-30% cocoa butter in the composition. Tiles consisting mainly of sugar and hydrogenated oils are not suitable for you.

  • 120 g white chocolate
  • 2 cups of milk
  • 3-4 pcs green cardamom mashed in a mortar
  • 2 tsp grated orange zest
  • vanilla on the tip of a knife
  • a pinch of cinnamon, whipped cream – for decoration (optional)

Break the chocolate into pieces and toss into a small saucepan. Add milk, crushed cardamom, zest. Heat until milk begins to bubble. Reduce the heat to a minimum and mix thoroughly the contents of the saucepan. Turn off after a minute. Strain the drink through a sieve, add vanillin, whisk lightly with a whisk. Steal with cream and cinnamon. Done!
