How to make Apricot Rum Balls
Step 1 Mix the ingredients and beat the butter
Take a bowl and mix together crushed vanilla sponge, apricot jam, tutti frutti, desiccated coconut, Cashew nuts and rum. You can also add apricot candy in the mix. In another bowl, beat butter with a stand mixer fitted with the paddle attachment. Do this for 1 minute until it is smooth.
Step 2 Prepare the butter cream icing, apricot rum balls and serve
Add the icing sugar to butter and beat until combined. Increase the speed to high and beat the frosting for an additional 2 minutes. Divide the mixture into equal sized balls. Coat the balls with butter cream icing and serve cold.
