Carrot Cupcakes / Muffins

Carrot baking is, one might say, a special section. Carrots are practically not felt here, but the taste is very rich, due to nuts and spices. This recipe for carrot muffins (or carrot muffins) is completely uncomplicated, and baking it turns out to be lush, light, fragrant and most importantly – delicious, with notes of cinnamon and ginger. Be sure to try it!

Eggs
2 pcs.
Brown sugar
125 g
Vegetable oil
125 ml
Flour
225 g
Baking powder
1/2 tsp
Cinnamon
1 tsp
Ground ginger
1/2 tsp
Carrot
200 g
Walnuts
75 g

Instruction manual

Preheat the oven to 200 °. Beat eggs with sugar and butter.

Sift flour with baking powder into a bowl, add a pinch of salt. Add cinnamon and ginger. Stir with a spatula until smooth.

Add grated carrots and chopped nuts. Mix.

Lay out the dough in tins. It is very convenient to use disposable paper capsules.

Bake 20-25 minutes before “dry toothpick”.
Cool cupcakes on a wire rack. Have a nice tea party!

Result

A very simple recipe for carrot muffins with nuts and cinnamon. A great option for tea or for a snack. For an effective presentation, carrot muffins can be decorated with a hat made of cheese cream!
