Gentle Marshmallow Pastilles
this recipe looks more like aromatic marshmallows. For their preparation not
you need to use invert syrup, that is, the sweets in them are much less, which
for some of us it is very important.
- Chicken egg 4 PC.
- Lemon acid 1/4 tsp
- Gelatin thirty g
- Granulated sugar 2 tbsp
- Water 100 ml
- Salt 1/4 tsp
- Vanilla sugar 1 tbsp
- For sprinkling:
- Powdered sugar 1/3 cups
- Potato starch 1/3 cups
How do we make marshmallows on egg whites? We start with the preparation of gelatin. Pour gelatin into the dishes and pour water. We give him time to swell for 20-30 minutes. We re-read the manufacturer’s instructions on a bag of gelatin.
Chicken eggs are divided into proteins and yolks. In a bowl with proteins add citric acid. Beat with a mixer at the lowest speed, gradually adding sugar, salt and vanilla sugar. Beat until stable white peaks and sugar dissolve.
We slightly heat the dish with gelatin in a water bath, stirring until all the grains of gelatin dissolve. Boil this mixture is not necessary.
Now pour the gelatin mixture in a thin stream into a bowl with whipped proteins, continuing to whisk them continuously. You can add a teaspoon of any juice, for example, cherry. Then the lozenges will have color.
When the mixture becomes lush and dense enough, we stop the whipping process. We put the mass very carefully in the shape covered with baking paper. Pre-grease the paper with vegetable refined oil.
Mix the mixture with a spatula. We put the mold in the refrigerator for solidification, preferably at night. In the morning we get it, cut it into cubes with a sharp, moistened knife.
