Yeast “down” pancakes on a dough like pilaf, cakes or sushi – milestone in the culinary biography. Learned to bake the “right” Pancake week pancakes – like a bird-three ride.

So here is what you need:
- 20 g live yeast
- 500 g flour
- 2, 5 Art. milk
- 1 tbsp. warm water
- 2 eggs
- 2 tbsp Sahara
- salt to taste
- 50 g butter
We take flour, but not pancake, but baking (from this pancakes we get some special home-made consistency) and sift it through a sieve.
Now we begin to create a dough.
Dissolve the yeast in warm water, add sugar and ¾ cup flour. Stir until smooth and put in a warm place without drafts.
In an hour it will be clear whether our enterprise succeeds – the dough should increase several times and begin to breathe.
Now we separate the yolks from the proteins. Mix the yolks and butter, melted to a liquid consistency. We add them to the dough, then pour in the remaining milk and pour in the flour, mix until a homogeneous consistency.
And again we leave the dough to rise. Once it rises again, beat the whites and add to the dough. We mix it gently from the bottom up.
And proceed directly to the priesthood – the oven.
Pancakes are most convenient in special pancake pans or, according to the old tradition, in heavy cast-iron pans.
There should be a lot of pancakes, although it is difficult to eat more than three – very satisfying. You’ll have to work hard, but it’s better not to overdo it. And then remember like Chekhov:
“The pancakes were fried, porous, puffy, like the shoulders of a merchant’s daughter … Podtykin smiled pleasantly, hiccuped with delight and doused them with hot oil. Then, as if fomenting his appetite and enjoying the anticipation, he slowly, with the arrangement, smeared their caviar. … After thinking a little, he put on the pancakes the fattest piece of salmon, sprat and sardine, then, mumbled and panting, rolled both pancakes into a pipe, drank a glass of vodka with a feeling, grunted, opened his mouth … But then he got an apoplexy blow ” .
Pancakes taken from the pan should be greased with oil from the “mother” porous side and put in a stack.
How to make a bake?
There is another half-forgotten bonus to yeast pancakes – pripeki. This is when the filling is baked directly to the pancake. Making a bake is very simple. Pour the dough into the pan, a little less than usual. As soon as the dough is set, put the heat in the middle.
They may like ours – a circle of orange or onions with mushrooms, smoked fish, cabbage with eggs. If the bake is poorly grasped with dough, pour a little dough on top of it. Next, turn over and fry like a normal pancake.
