Asian cod skewers, step by step recipe with photo


Step 1

Pour half of the salt onto the tray. Put the cod fillet on it, cover it with the remaining salt and refrigerate for 1 hour.

Step 2

Peel and chop the shallots, garlic and hot pepper. Warm coriander and zira grains in a dry frying pan until flavor appears. Add turmeric and peanuts and simmer for a couple more minutes.

Step 3

Transfer onions, garlic, peppers, peanuts and spices into a blender bowl and chop. Add coconut milk, sugar and fish sauce, process in a blender again until a smooth paste forms. Add some water if necessary.

Step 4

Remove the fish from the salt and rinse under running water. Dry with napkins, put on a dish and carefully cover with a paste of spices. Leave for 1 hour at room temperature.

Step 5

Light the coals, set the grate over the flame and heat it properly. Lubricate the wire rack with vegetable oil.

Step 6

Take the fish out of the marinade, shake off the excess. Put on the wire rack and fry for 3-5 minutes on each side.
