For marinade with a fine grater, remove the zest from the lemon, squeeze the juice from it. Mix juice and zest with calvados, sugar, vegetable oil. Season with salt and pepper.
Cut chicken breast into 1.5 cm thick slices. Mix with marinade, refrigerate for 2 hours.
Peel the apples, remove the core, cut into large pieces, pour the lemon juice.
Place the sliced breasts alternately with apples on wooden skewers previously soaked in water.
Heat olive oil in a grill pan, fry kebabs on each side for 5-7 minutes.
Finely chop the tarragon sauce, mix with mayonnaise, add lime juice, mix. Serve the sauce separately.
