- 600 g chicken breast fillet
- 3 tbsp. l Extra Virgin Olive Oil
- 400 g dried apricots
- 200 g prunes
- 200 g of cottage cheese
- juice of half a lemon
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Soak the skewers for 30 minutes. If dried apricots and prunes are solid, pour boiling water over them and leave for 10 minutes. Throw it in a colander, put aside half the dried apricots. Cut the fillet into pieces the size of dried apricots. In a bowl, combine olive oil, half lemon juice, salt and pepper.
String skewers of chicken, prunes and dried apricots and put on a large plate. Pour the marinade and leave for 10 minutes. During this time, turn the kebabs 1-2 times. Fry kebabs over coals for 3-4 minutes. from each side. Put the remaining dried apricots and cottage cheese in a blender, pour over lemon juice and beat well.
Remember that chicken breast fillet is very easy to dry. Watch the time!
