- 6 cod steaks weighing 180 g
- 1 bunch of cilantro
- 2 limes
- 1 pod of hot red pepper
- 1 slice of ginger 2 cm long
- 2 shallots
- 6 tbsp fish sauce
- 1 tbsp brown sugar
- black pepper to taste
STEP-BY-STEP COOKING RECIPE
Tear off the leaves of cilantro. Remove the zest from the limes with a fine grater, squeeze the juice from the pulp. Clear hot peppers from seeds and partitions and chop finely. Peel and finely chop the ginger and shallot.
In a bowl, grind sugar with zest, add lime juice, cilantro leaves, hot pepper, ginger, shallot and fish sauce. Shuffle.
Cut 6 pieces of foil and form 6 boats out of them. Put one steak in each, and spread the marinade on top. Close the boats and marinate for 1 hour.
Heat the grill over the coals. Put the foil boats on the wire rack and bake for 15-20 minutes. Expand the foil, check if the fish has baked. Serve immediately.
