Grilled Dorado

INGREDIENTS

  • 1 large dorada weighing approximately 800 g
  • 1 bunch parsley
  • 1 orange
  • zest of half a lemon
  • 1 tsp dried oregano
  • 2 tbsp. l olive oil
  • freshly ground black pepper
  • 1 tbsp. l soy sauce

STEP-BY-STEP COOKING RECIPE

Step 1

Rub the zest of lemon and the zest of half an orange on a fine grater. Finely chop the parsley leaves and mix them with zest, dried oregano pepper. Add soy sauce and olive oil, mix.

Step 2

Gut the gilthead, remove the gills, clean. Make 2-3 oblique incisions on the sides and grease the fish with a green mixture. Leave on for 15-30 minutes.

Step 3

Cut the white layer from the orange, then cut the pulp into circles. Put oranges in the belly of the dorada and bake fish over hot coals or grilled until tender, 20 min.

To prepare the sauce for the fish, bring the juice of 3 oranges and 1 lemon to a boil, season with salt and white pepper and boil a little. Add finely chopped parsley, basil and a sprig of mint. Pour in 1 tbsp. l olive oil and mix the sauce.
