INGREDIENTS

  • 1 sturgeon (weighing 3 kg)
  • 3 lemons
  • 1 bunch of fresh cilantro
  • salt, white pepper
  • 1.5 kg of onions
  • 100 ml dry white wine

STEP-BY-STEP COOKING RECIPE

Cook the marinade. To do this, peel the onion, cut into strips. Grate lemons on a fine grater, chop cilantro. Mix all. Pour wine, salt, pepper to taste. Mix everything and knead with your hands. Sturgeon remove head and entrails. Cut along the ridge. Remove skin, cut back ridge and fat. Cut into layers (3-4 cm wide) across the fibers. Put the fish in a deep dish in layers, alternating with the prepared marinade. Marinate for about 1 hour. Then string pieces of sturgeon on a skewer. Grill for about 2-3 minutes. from each side. Serve with pickles and pickled vegetables. For example, with sauerkraut, pickled garlic and wild garlic.
