Lamb liver skewers, step by step recipe with photo

The easiest way to cook a lamb liver is to grill it over charcoal. The liver is very tender, so you need to handle it as delicately as possible. – Do not dry, it should remain inside the pink. And pick the pickle as simple as possible – olive oil, garlic and a pinch of zira, this is enough to emphasize the taste.

Lamb liver skewers

INGREDIENTS

  • 1 tbsp. l zira seed
  • 4 cloves of garlic
  • olive oil
  • 1 tsp salt
  • 500 g lamb liver
  • 200 g of cherry tomatoes
  • 2 sweet peppers
  • a bunch of basil
  • thin pita bread or 4 small cakes
  • lemon juice
  • 1/2 tsp freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1

In a dry frying pan, fry the seeds of cumin until a flavor appears, 1 min. Pour into a mortar and cool slightly. Rub with a pinch of salt.

Peel the garlic and chop finely, put in a large bowl, add 2 tbsp. l olive oil and zira, mix.

Step 3

Cut the liver into cubes with a side of 2.5 cm. Put in the marinade and mix. Cover the bowl with plastic wrap and refrigerate for 1 hour.

Light the coals and wait for them to turn into light ash. String liver on skewers, string tomatoes and slices of sweet pepper on other skewers. Fry the liver over hot coals for 3-5 minutes. The liver should stay inside pink! Cook the vegetables for 7-8 minutes.

Step 5

Spread the liver and fried vegetables on the cakes, sprinkle with lemon juice, pepper and sprinkle with basil leaves. Roll the cakes and serve.
