Breast on ribs is one of the cheapest “cuts” of lamb. There is not much meat on each bone, but how tender, tasty and aromatic it is! And it’s great to give up formalities at the table, put aside the knife and fork – and nibble the meat from the bones, dipping the ribs in sweet and sour gravy …
- 1.5 kg of lamb brisket on ribs
- 1/2 tsp. dry rosemary and marjoram
- 2 cloves of garlic
- Extra Virgin Olive Oil
- salt, freshly ground black pepper
- 2 cup cranberries – for sauce
- 1 red onion – for sauce
- 2 cloves of garlic – for sauce
- 1 large orange – for sauce
- 1 tbsp. l honey – for sauce
- 1 tsp mustard seeds – for sauce
- 5 peas of allspice – for sauce
- 1 bay leaf – for sauce
STEP-BY-STEP COOKING RECIPE
Grind onions and garlic for the sauce. Remove the zest from the orange, squeeze the juice. Put cranberries, orange juice, zest, honey and all the spices in a thick-bottomed stewpan, bring to a boil under the lid, then crush about half the berries with a crush. Cook, stirring occasionally, until thick, about 15 minutes. Remove from heat, cool completely, about 1 hour, cover
and refrigerate for at least 2 hours. Then salt.
Cut lamb ribs 1-2 ribs. Crush the dried herbs with black pepper to a mortar to taste. Cut the garlic cloves in half and grate each rib on all sides with garlic and mortar mixture. Sprinkle with oil, cover the meat with a film and leave in a cool place for 2 hours.
Preheat the grill or just the oven. Put chops
on a wire rack installed in a baking sheet, and fry in the upper part of the oven – depending on the desired degree of frying – 20–25 min. Turn over once during frying. Before serving, put on a heated dish, loosely cover with foil and leave for 5-7 minutes. Serve with cold sauce.
