Quail skewers, step by step recipe with photo

The simplest and most beautiful thing that can be done with quails is barbecue. Try to choose a larger and fleshy quail for barbecue – the more meat there is in the quail, the tastier and juicier it is on charcoal. The main thing in the barbecue from this bird is not to dry it, so be careful, do not be distracted, turn the skewer more often.

Quail skewers


  • 8 prepared quails
  • vegetable oil
  • flour
  • zira
  • red hot pepper
  • salt


Step 1

Quail in salt water for 20 minutes.

Step 2

Dry, coat on all sides with vegetable oil. Sprinkle with zira and red hot pepper. Sprinkle a little flour.

Step 3

String 2 quails per skewer.

Step 4

Fry over the coals, turning, until golden brown, 20-25 minutes. Serve immediately.

Mistress note

Another great and easy way is to cook a bedana in a double boiler. As in the case of kebab, quail soak in salt water for 20 minutes. Season with zira and red pepper. Cook in a double boiler for 40 minutes. In Samarkand, where pilaf is often cooked in linseed oil, quails prepared in such a way are laid on rice before closing the lid. It turns out an impromptu double boiler. Together with them, boiled and peeled quail eggs are laid on rice. When serving, both quail and eggs are spread on top of rice along with meat.
