Ribs with mango and tequila sauce, step by step recipe with photo

Ribs with mango and tequila sauce


  • 3 kg of calf or lamb ribs
  • 2 large mangoes
  • 2 small hot chili peppers
  • 3 cm fresh ginger root
  • 1/2 cup ketchup
  • 4 tbsp. l oyster sauce
  • 1/2 cup tequila
  • 2 lime juice and zest
  • 4 tbsp. l honey
  • salt, freshly ground black pepper


Step 1

Grind the ginger. Peel the mango and cut it off the bone. In chili, remove the seeds and white partitions, cut the flesh.

Step 2

Grind chili, mango, ginger in a blender, add oyster sauce, tequila, ketchup, juice and lime zest, honey, salt and pepper.

Step 3

Remove the top film from the ribs, cut into pieces 2-3 ribs thick. Coat them on all sides with sauce, cover with plastic wrap and leave them in the refrigerator for 3-4 hours.

Step 4

Fry the ribs on charcoal or under a very hot grill, constantly turning, until crisp, 7-10 minutes. each serving. Serve immediately with the remaining sauce.

By the way

In the same way, you can cook pork and beef ribs – you only have to marinate them for a couple of hours longer, and pork ribs are fried for at least 15 minutes.
