STEP-BY-STEP COOKING RECIPE
Pour dried apricots with 1 cup boiling water for 30 minutes. Discard the softened fruits in a colander, let all the liquid drain, save it. Finely chop the dried apricots. Pour the infusion from it into the pan, evaporate to 3-4 tbsp. l., mix with dried apricots.
Peel and chop the onions as thin as possible. Peel the apple and remove the core. Cut the pulp into small cubes.
In a clean frying pan, heat the oil, put the onions and fry on low heat until transparent, 5 min.
Add apples, dried apricots along with the liquid, sugar, vinegar, bay leaf, ginger powder, cayenne pepper and salt. Bring to a boil, cook over low heat, stirring occasionally, 20 minutes.
Meanwhile, cut the cilantro stalks as small as possible, chop the leaves coarsely.
Add cilantro stalks to the finished seasoning, remove the bay leaf. Remove from heat and cool completely for 1 hour. Then add cilantro leaves. Serve with cold pork and duck.
