Reverse seared like a boss, this tri-tip is everything a steak should be: juicy, flavorful, and addicting.
1 (3-5 lb) tri-tip
1/8 Cup pepper
1/8 Cup salt
1When ready to cook, set Traeger temperature to 225℉ and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.
2Combine salt and pepper. Season all sides of meat with a heavy coat of the salt and pepper mixture.
3Place tri-tip directly on the grill grate and cook until it reaches an internal temperature of 130℉, this should take about 60 to 90 minutes.
4When tri-tip reaches 130℉, pull off the grill and wrap in foil.
5Increase the Traeger temperature to 500°F and preheat, lid closed for 15 minutes.
6When grill comes to temperature, remove tri-tip from foil and sear for 4 minutes on each side.
7Pull off the grill and allow to rest for 10 to 15 minutes. Slice against the grain to serve. Enjoy!
