Cut the beef into thin slices, about 1 cm thick. However, you can cut it as you like, depending on the feed. Traditionally, meat is cut in large enough pieces. Salt, pepper. Set aside.
In the blender, send the ingredients for the sauce: chili pepper, ginger, galangal, garlic, shallot, shrimp paste, tomato, turmeric, macadamia nuts, lemongrass, coriander, pepper. Beat in a blender with added water (200 ml of water)
Heat oil in a deep skillet. Pour the contents of the blender into the pan and bring to a boil. Add lime leaves.
Place the beef in a skillet.
Pour in coconut milk and mix. If the sauce does not completely cover the meat, add more water. Salt.
Stew on a quiet fire without a lid for 1.5 – 2 hours. If the sauce will boil, add more water. In Indonesia, beef stew for at least 4 hours, but the reason for this is not the best quality Indonesian beef. If you have a good piece of tenderloin, you may need no more than 40 – 50 minutes.
The sauce should evaporate almost completely. At the end of cooking, add a tablespoon (or two) of thick sweet soy sauce. This will add sweet shades and a dark saturated color to the sauce.
Many Indonesian dishes are served with deep-fried garlic and shallots. Literally a minute they are fried in hot oil to brownish-gold color. Sprinkle the meat with fried onions and garlic and serve with white rice.
