Smoke roasted olives aren’t just for the Greeks. This recipe had a fresh, spicy sauce that will make green or black olives sing with flavor.
2 Cup Mixed Olives
3 Sprig fresh rosemary
2 Clove garlic, minced
2 Tablespoon orange zest
333/1000 Cup extra-virgin olive oil
2 Tablespoon orange juice
1/2 Teaspoon red pepper flakes
1Combine the olives, rosemary, garlic, orange zest, red pepper flakes, olive oil, and orange juice in a glass oven-safe pie plate or baking dish. Cover with foil.
2When ready to cook, set temperature to 300℉ and preheat, lid closed for 15 minutes.
3Roast the olives for 45 minutes, stirring once or twice. Serve warm in an attractive bowl. Enjoy!
