Homemade Caesar Salad with Classic Sauce


for salad:

  • chicken breast
    400 g
  • parmesan cheese
    100 g
  • Cherry tomatoes
    3-4 PC.
  • Romaine lettuce
  • crackers

for sauce:

  • egg yolk
    2 PC.
  • lime
    1/2 PC.
  • lemon
    1/4 PC.
  • Dijon mustard
    2 tsp
  • ground black pepper
  • olive oil
  • parmesan cheese
  • anchovies
  • salt

Chicken Breasts


  • To prepare the sauce, mix raw chicken yolks with Dijon mustard without seeds, add salt to taste. Beat the mass until the volume increases. Pour olive oil slowly while continuing to whisk. Add lime and lemon juice and beat again. Dry two anchovies on a paper towel, knead in mashed potatoes. Grate Parmesan cheese, add it and anchovies to the sauce and beat well again.
  • Chicken breast cut into medium slices. Pour in a dry frying pan, salt, black pepper, curry and a mixture of Provence herbs. Heat the spices, add olive oil, chicken, fry until golden brown.
  • To prepare croutons, cut a white loaf into cubes. Separately mix olive oil, salt and minced garlic. Put croutons in a baking sheet, pour over the mixture, sprinkle oregano and bake in the oven for 10 minutes, croutons should be browned.
  • Tear the leaves of Romen salad with your hands, pour the Caesar salad with the resulting classic sauce, put the chicken, then cherry tomatoes, a little more sauce, sprinkle with croutons. Sprinkle grated parmesan on top.
