Zucchini snack cake

  • pancake dough:
  • 100 gr. – milk
  • 200 gr. – kefir
  • this proportion is not important, you can take or only milk or kefir
  • 2 pcs. – eggs
  • 1/2 tsp – salt
  • 1/2 tsp – soda
  • 1 tsp – sugar
  • 1 tbsp – sunflower oil
  • 200 gr. – flour (you can get more or less).
  • some greens – chives and dill
  • for cream
  • 200 gr. – sour cream
  • 1 clove of garlic
  • a small bunch of lesson
  • 100 gr. – cheese
  • salt
  • pepper

Step by step recipe

Peel the zucchini

And rub it on a fine grater

We squeeze the juice from the zucchini and pour it

Beat zucchini with a blender to obtain a homogeneous mass

Add kefir and milk to them

Then eggs, salt, soda, sugar

Add finely chopped dill and whisk everything with a whisk.

Gradually we begin to introduce the sifted flour, constantly whipping the dough so that there are no lumps.

The dough should resemble liquid sour cream and should not be thick, if you suddenly transferred the flour, then you need to add a little boiled water to make the dough comfortable for baking.

Add some sunflower oil

The dough is ready we start to bake pancakes

Pour some sunflower oil into the pan, this is done once, then we do not lubricate the pan with anything

Pour pancakes into the middle of the pan about half of the soup ladle and evenly distribute them on the surface (as we do when baking ordinary pancakes)

Fry them on both sides until a pleasant golden color

Pancakes are ready

Making the filling

Take sour cream, add garlic, green onion, dill

Cheese grated and mixed thoroughly

Put pancakes in a baking dish and begin to smear each pancake

We lubricate the last pancake with the filling, you can additionally sprinkle with cheese and send it to the oven for just a couple of minutes, in order to melt the cheese

The cake is ready, decorate it and you can serve it to guests or your loved ones for dinner
