The traditional way to cook cauliflower is to send it into soup, boil it and turn it into a useful side dish or fry in butter crackers, as was taught in the book “On tasty and healthy food”.
There are completely different ideas in the kitchens of other countries. And here we also want to use them. This is a completely different look at the product!
Cauliflower is quite capable of being not only a boring utility without a special taste – it has great potential!

Creamy Cauliflower Soup with Curry


This is a spicy and exotic soup because it has a lot of curry. For 3-4 servings, you will need these ingredients:

  • 1 medium head of cauliflower, divided into inflorescences

  • 1 red bell pepper, diced

  • 1 onion, diced

  • 2-3 garlic cloves, finely chopped

  • 2 cups vegetable stock

  • 1.5 cups of water

  • 3 tablespoons of oil

  • 2 tablespoons curry powder

  • 1 tablespoon of ground sweet paprika

  • salt and pepper to taste

  • 2 tablespoons of olive oil

In a large saucepan, heat the oil over medium heat. Add onions and fry until golden, it will take 3-5 minutes. Add bell pepper and cauliflower and simmer for another 2-3 minutes. After this, it remains to add finely chopped garlic and cook for about 1 minute.
Pour curry powder, sweet paprika powder, salt and mix well. Pour in water and broth, bring to a boil and cook for 10 minutes.
Allow the mixture to cool slightly, then mashed using a blender. After spilling on plates, add a few drops of olive oil on top.

Cauliflower Gratin

Until you tell, no one will guess that this is a dish of cauliflower. The dish has a creamy taste. The main component of gratin, in addition to cabbage, is cheese. The right choice of cheese – and this should be a combination of several varieties with an expressive, island flavor – this is a fundamental point.

  1. 2 large heads of cauliflower, sorted into inflorescences

  2. 250 g of grated hard cheese (it is advisable to choose varieties with an acute taste, such as greyzer)

  3. 150 g grated cheddar cheese

  4. 6 tablespoons butter

  5. 0.5 teaspoon dried garlic

  6. 1/2 teaspoon meat seasoning

Turn on the oven until it warms up to 180 °. Boil cauliflower for 5 minutes. Drain it and transfer to a large bowl, mash the pusher with cauliflower. It’s best to do this with such a grind, because we need the cabbage not to turn into an absolutely smooth mashed potatoes, but to preserve the texture to some extent – let small pieces sometimes meet, let the mass be not perfect.

The mashed potatoes obtained after kneading should be mixed with butter, spices and cheese, but not for everyone. Leave a little to sprinkle on top of the dish. Pure the mashed potatoes in a ceramic or metal baking tray, sprinkle a handful of cheese on top and put in the oven. Bake for 40-50 minutes at a temperature of 180 degrees. Gratin is ready when you see that the surface has turned golden brown. By the way, this dish can be frozen. This can be done at the stage when the mashed potatoes are laid out in a baking dish, but not yet cooked. Now you can tighten the mold with cling film and freeze. Then it will be possible to bake in a practically frozen state. You need to get a dish, let it stand outside the freezer for half an hour, and then bake.

Cabbage with raisins and capers


This dish looks very unusual. Sweet raisins are added to the cabbage. But do not be afraid to try. Sweetness is offset by other flavors: pickled capers, garlic speck and sourness of lemon juice. Such a cabbage is a wonderful side dish for low-fat fish, as an independent dish it is also good. Try it for sure!

  • 1 head of cauliflower, divided into inflorescences

  • 6 garlic cloves, unpeeled

  • 3 tablespoons butter

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 cup white raisins

  • a bunch of chopped parsley

  • 1 tablespoon capers, finely chopped

  • 2 teaspoons of lemon juice

  • a handful of pine nuts (optional)

Cooking begins with garlic. It, right in the husk, needs to be wrapped in foil and put in the oven, heated to 200 °. It will be baked here for 25-30 minutes until the slices are completely soft. After that, they will easily slip out of the skin, just lightly press and you’re done. These garlic need to be mashed with a fork in mashed potatoes.
Now melt the butter over low heat. Put cabbage inflorescences on a baking sheet and pour melted butter on top. Bake in the oven for 15-20 minutes. Put the prepared cabbage in a bowl and add all the other ingredients. Shuffle and done!
