Baked chickpeas – a dish that everyone should at least make. Using only six of the most common ingredients, you can make a completely authentic rustic Greek dish: lean, vegetarian, healthy and very tasty.
As you may know, chickpeas are cooked for an extremely long time. Before cooking, you need to soak it for a day, and then cook from an hour to four – how lucky.
To save time, you can use canned chickpeas.
In addition to it, the main ingredients of the dish will be onion, rosemary, olive oil and salt / pepper.
Whatever chickpeas you choose – cooked at home or canned, do not forget to stock up on the remaining liquid from it: broth or juice in which it was in the jar. You will need 2 cups of one or the other.

For chickpeas, you will need twice as many onions than indicated on the link above. It may seem that this is excessively much, but no: the onion literally dissolves in chickpea.
Cook the chickpeas in a cast-iron or thick ceramic skillet-skillet.
800 gr chickpeas
1/2 cup olive oil
2 cups liquid from chickpeas (warm to a boil)
1 tablespoon dry or fresh minced rosemary
2 teaspoons of salt
2 teaspoons freshly ground black pepper
2.5 cup caramelized onions
Take a stewpan or cast-iron skillet. Put caramelized onions on its bottom, and chickpeas on top. Sprinkle rosemary, salt and pepper, pour hot liquid. Gently mix, cover with foil. Bake in the oven for 2 hours at 180 degrees. Now you need to remove the foil and and cook in the oven for another half hour.
