This recipe is for those who are very hungry in the morning! For a light breakfast, it will not look like a bit! Cheesecakes with potatoes are thorough and, in fact, are something intermediate between the cheesecakes, pancakes and pancakes. Of course, no sweet toppings suit them, but sour cream, grated cheese, a spread of feta cheese and greens – all this can be very helpful. This dish is from the repertoire of Soviet cuisine – it was featured in the Book of Tasty and Healthy Food, but it was not widely used. Why – it is not clear, the products in this recipe are quite folk and such a breakfast turns out to be really tasty. The only explanation may lie in the cooking time: it is greater than that of ordinary cheesecakes. Our cheesecakes will need to be sent to the refrigerator for half an hour before frying or baking (yes! It’s best to bake them in the oven, but to save time, you can also fry them in a pan, as we did).

  • Curd 250 g
  • Boiled potatoes 200 g
  • Egg – 1pc
  • Flour 50 g
  • butter – 1-2 teaspoons
  • salt to taste

Boiled potatoes need to be crushed in mashed potatoes. It should be perfect: always without lumps. Cottage cheese is also better not to be too lazy and slightly knead with a fork so that the grains are smaller. Mix together in an egg, then check the consistency. If it turned out to be very dense, flour can be neglected altogether – leave it only for sprinkling. If the potatoes are watery and the dough is liquid, pour the flour boldly and do not be afraid to add more than indicated if the dough is still liquid. Salt the dough just a little bit, mix and shape the cottage cheese pancakes on a flour dusted board. By the way, do you know that the easiest way to shape cheesecakes is with a knife, slapping the top and sides with the end side of the blade? It turns out much more accurately than if you do it by hand. Now we send our breakfast to stand in the refrigerator for half an hour. Then you can fry in a pan with butter. If you have time, bake in the oven at a low temperature for about half an hour.
