White chocolate only by name chocolate. It does not have the main chocolate component – cocoa beans. But there is cocoa butter, which is quite easy to get: it is sold in health food stores and vegan shops.
Therefore, it’s easy to make luxurious white chocolate at home – and it can be the most unusual and exquisite as you wish: with pink pepper, mint, sesame seeds, with orange and lemon zest – this is a real place for imagination.
And you can do it very quickly – literally in 5-10 minutes, though you will have to endure it while it freezes in the refrigerator.
The main thing in making white chocolate is to find good cocoa butter. This is a fundamental point. It can be of different quality and bad when melting, it behaves in a way that we do not need at all: it is stratified into liquid and oily components, turns into flakes and so on.
Pay attention also to this: cocoa butter is food and cosmetic, the latter is added to all sorts of homemade creams and masks. So it is imperative to check when buying that your oil is just edible.
So, here is what you need for white chocolate:
- 60 gr cocoa butter
- 1/3 cup powdered sugar
- 1/2 teaspoon milk powder
- vanilla on the tip of a knife
- 1/2 teaspoon orange extract (can be replaced with orange zest – 2 teaspoons)
- 3/4 teaspoon ground ginger (you can use any spices you like, or vice versa exclude spices from the recipe)
- a pinch of salt
- two white and red caramels crushed into crumbs
In addition to products, silicone molds are required, not necessarily special chocolate ones, you can use cupcake molds, pour chocolate on their bottom with a thick layer, then you will get chocolate discs.
Melt the cocoa butter in the microwave or in a water bath. After this, add powdered sugar and milk powder to it. Stir until all sugar is completely dissolved. Now you can add the rest of the ingredients. Pour the mixture into silicone molds: sprinkle with caramel crumbs on top, let cool. After that, put in the freezer for 2-3 hours.
