This oatmeal cake is fragrant with cinnamon, on top of it is a crisp of brown sugar and coconut. He is elementary. All ingredients except maybe coconut, such as are always at hand: oatmeal, sugar, butter, flour. By the way, if you do not like coconut, then there are replacement options. Look: almond petals, finely chopped walnut, sliced ​​banana, will do.

Oatmeal pie is a good dessert from the “for every day” series and an alternative to breakfast with porridge: it cooks quickly, saturates well.

  2. For the pie:
  3. 1 cup oatmeal medium grinding
  4. 380 ml boiling water
  5. 120 g butter
  6. 1 cup brown sugar
  7. 1 cup white sugar
  8. a pinch of vanillin
  9. 2 eggs
  10. 1.5 cups flour
  11. 1 tsp baking powder
  12. a pinch of soda and quenching vinegar
  13. 1 tsp cinnamon
  14. 1 tsp salt
  15. For topping:
  16. 90 g melted butter
  17. 0.5 cups brown sugar
  18. a pinch of vanillin
  19. 60 ml of milk
  20. 1 cup coconut

Preheat the oven to 160 ° C. In a small bowl, combine oats and boiling water. Let stand for 20 minutes.
Beat eggs with vanilla lightly and then add flour, baking powder, slaked soda, cinnamon and salt to them. Pound the butter with brown and white sugar and add to the oatmeal mixture. Now we have the final stirring, the dough should turn out a consistency of thick sour cream.
Lubricate the cake pan with vegetable oil and fill with the resulting dough. Bake for 40-45 minutes or until a toothpick inserted in the center is clean.
While the oatmeal cake is baking, we make a topping, due to which it will be moist-juicy, and even with a sugar crust.
Mix melted butter, brown sugar, vanilla and milk, coconut.
When the cake is baked, pour it on top with the topping mixture, and then put it in the oven, switching it to the top heat. We need fast and intense baking of the top so that the sugar sets. Usually this takes 2-3 minutes, but the process may take different times in different ovens.
When everything is ready, let the cake stand – rest for an hour, then you can serve it to the table.
