Manno-oat pancakes

Can fritters be low-calorie? There is a chance if you try to get rid of flour. Try replacing it with a mixture of semolina and oatmeal – the pancakes will not turn out as rich as usual, but it will be delicious and much more healthy.

If you want to maximize the usefulness of fritters, add grated apple and carrots to the dough, knead the fritters on low-calorie kefir or yogurt and fry in a pan where you can get a minimum of oil, or even without it. Such pans now exist, for example, the English brand Walmer has one

  • Pancake pan Walmer
    semolina – 2/3 glasses

  • fine or medium-sized oatmeal – 2/3 cup

  • quail eggs – 3 pcs. (can be replaced with 1 chicken)

  • flavored low fat yogurt – 2/3 glasses

  • dry yeast – pinch

  • Salt and sugar to taste

  • Maple Syrup – for topping

Knead the dough on room temperature yogurt, not cold. Pour oatmeal and semolina, salt and sugar, yeast into yogurt. Mix well and let stand for an hour and a half. When the dough comes up, add eggs to it, previously whipping them. Mix gently and bake immediately in a pan without oil or with a small amount. Serve the pancakes by watering them with maple syrup.

Fritters with apple slices

These pancakes are slightly sweet and the circle of apple that is baked inside each pancake gives it a pleasant hardness. An ideal summer breakfast for a lazy country or city morning.

  • apple (choose a hard and juicy variety, preferably with sourness)

  • flour – 1 cup

  • yogurt – 2/3 cup

  • milk – 2/3 cup

  • egg 1 pc.

  • soda – a pinch

  • sugar – 2 tbsp.

  • salt – a pinch

  • vegetable oil – for frying

  • icing sugar, honey, berries – to your taste, for decoration when serving

Cut the apple into circles about 2 mm thick. Do not clean them, cut directly with the skin.

Put the finished mugs in slightly salted water so that while you are doing the dough, the apple does not darken.

Mix flour, salt, sugar and soda. Pour milk with yogurt here, and beat an egg.

The resulting dough will be thinner than is usually done for pancakes, but you should not be afraid. Now we pass to the crucial stage: fry pancakes with a slice of apple.

Heat a frying pan with oil and pour about 1.5 tablespoons of dough, and put an apple circle on top of it. Close the lid and let stand for a few seconds, after which we turn it over and fry it without the lid.

Serve with powdered sugar or sprinkled with berries.

Zucchini pancakes with cheese

What is the secret of these pancakes? Of course in cheese! It will not be clearly felt in the pancakes, but will change the usual texture of squash pancakes, making it more elastic. Cheese is needed spicy, with a brightly hostile taste. No sanctions – we would say – put the parmesan. But there are sanctions, and Belarusian parmesan and other parmesan substitutes are only tears to pour. So what to do? Take spicy hard cheese, any that slightly nibbles your tongue – this is a good test for the desired sharpness of taste. Another important point is flour. Whole grain flour is coarser than usual and gives the pancakes texture.

  • milk squash – 500-600 g

  • whole grain flour – 3 tbsp

  • grated cheese – 100 g

  • eggs – 2 pcs

  • salt to taste

  • sour cream – for serving

  • vegetable oil – for frying

Zucchini grate. Discard the resulting liquid. Add cheese to zucchini, mix. Then add eggs, mix again. After that add flour, and in the last turn – salt. Bring the dough to homogeneity. Fritters spread on a very hot pan with a tablespoon. We wait a minute and a half when the surface grasps well, and then turn it over and fry it on the other side.
