- 2 tablespoons olive oil
- 1/2 medium white onion peeled and chopped
- 1/2 medium carrot diced
- 2 large eggs lightly beaten
- 2 cups cooked white rice
- 1 cup frozen peas
- 2 tablespoons soy sauce
Press Sauté button on Instant Pot®. Add the oil and allow it to heat up.
Add onion and carrot to Instant Pot®. Cook until vegetables are soft, 5 minutes. Stir occasionally.
Move vegetables to side of pot and pour beaten eggs into empty spot in the Instant Pot®. Scramble eggs in the pot 3 minutes.
Pour in rice and peas. Stir and then cook an additional 2 minutes.
Mix in the soy sauce and turn Instant Pot® off.
