How to make Arancini Siciliani
Step 1 Cook the rice
To prepare this enticing Italian dish, first, cook arborio rice along with the vegetable broth. Cook well for at least half an hour. Add chopped thyme and salt to the rice. Once the rice is properly cooked, spread it out on a flat plate to cool and settle it at room temperature.
Step 2 Stuff the rice balls
Once the rice is cool enough, add in grated parmesan cheese and mix well with the rice. Prepare small portions from this mixture. Take one portion and using your thumb create a cavity in the centre. Fill this depression with pre-cooked lamb mince, a bit of shredded mozzarella and one deshelled, roasted pine nut. Repeat the same process with all the portions.
Step 3 Refrigerate the prepared rice balls
Combine all the ingredients and shape in the form of balls. Make sure the stuffing is perfect. Keep the stuffed rice balls in the refrigerator for half an hour.
Step 4 Coat the rice balls in egg wash and breadcrumbs
Now, beat the eggs in a bowl to get egg wash. Take out the rice balls, dust them with flour and roll in the egg wash. Once done, coat the rice balls evenly with breadcrumbs.
Step 5 Fry the rice balls and serve hot
Next, in a pan heat 3 cups refined oil over medium flame and add in the prepared rice balls. Fry the balls till they change colour to golden. Your Arancini Siciliani is ready!
